There is no magic bullet.  Your best bet is to build from source.   
You can do this by installing Apple's developer tools on tiger and  
then building your choice of systems (asterisk or OpenPBX, OR  
FreePBX, or whatever).  Building from source isn't an obvious  
approach like clicking on an installer, but when you figure it out,  
then you know how to do it...

I have been using asterisk 1.23 and 1.4 on PowerPC Mac hardware  
running osx.  I built from source using the available tarball (or SVN  
for 1.4 trunk).

Sorry there is no easy link to a double clickable installer, but even  
that is kind of a red herring as configuration still isn't all pretty  
and nice.  Learning to setup an asterisk based PBX isn't all that  
easy or pretty currently IMO.

I tried a Grandstream HT-488 first (garbage), then I tried the  
Wellgate 3701a, which was much better in terms of reliability,  but  
recently (eight months of use) took a dive.  This means it need to be  
shipped back to Taiwan for warranty service.

I currently have on order an Audiocodes MP114 (2FXS/2FXO) which I  
should have in a couple of days, and I am hoping it raises up the  
quality of my FXO considerably.

I like uLaw for codec as long as you have enough bandwidth.  I use  
G729 for low bandwidth links.

The Sipura/Linksys single port FXO is also quite popular,
