Two replies means the server replied twice.
You can ignore the 'No data in one second' messages.

If you get replies to IAX ping that should mean that the IAX channel
at least is alive.

I suggest you get an IAX softphone (a bunch of them are free) and see
if you get the same behavior using those - if not, it's just the SIP
channel that goes to sleep.
